Chickpea Tacos Recipe by Gundersen Health System
1 (15 oz.) can garbanzo beans (chick peas), drained and rinsed 1 ripe avocado, pitted, peeled and mashed 1-2 Tbs. fresh minced cilantro ½ lime, juiced Salt and pepper to taste 8 hard corn taco shells Sour cream and salsa Lettuce and tomato
In a medium bowl, combine beans, avocado, cilantro, lime juice, salt and pepper. Serve in a hard taco shell. Top with sour cream, salsa, lettuce and tomato.
