Avocado Deviled Eggs

Ingredients

6 eggs, hard boiled and peeled
1 avocado, peeled and pitted
2 tbsp fresh cilantro
1 tbsp lemon juice
zest of 1 lemon
1/4 tsp pepper
1/4 tsp salt
optional garnishes: thinly sliced radish, chopped cilantro, paprika, cayenne, chopped chives

Directions

Cut eggs in half lengthwise and remove yolks. Place half the yolks in a medium bowl and discard the rest.
Add the avocado, cilantro, lemon juice, zest, salt, and pepper to the bowl and mash until desired smoothness. For a smoother consistency, use a food processor.
Spoon or pipe into egg whites and garnish as desired.

Beet Pickled Eggs

Ingredients

6 eggs, hard boiled and peeled
1 can whole beets
1/4 cup sugar
1/2 cup cider vinegar
1/2 cup water

Directions

Drain beets. Reserve 1/2 cup of juice from beets.
Place beets and eggs in a quart jar.
In a small sauce pan bring the sugar, water, vinegar, and reserved beet juice to boil.
Pour over beets and eggs. Cover tightly and refrigerate 12-24 hours before serving. Beets can be used for salads.

Turmeric Pickled Eggs

Serves 6

Ingredients

6 eggs, hard boiled and peeled
1 cup cider vinegar
1 cup water
2 tbsp sugar
2 tsp ground turmeric
1 tbsp whole peppercorns
1/2 onion, thinly sliced (optional)

Directions

Place eggs, peppercorns, and onion (optional) in a quart jar.
In a small saucepan, bring sugar, water, vinegar, and turmeric to a simmer. Stir until sugar dissolves.
Pour over eggs. Cover jar tightly and refrigerate 12-24 hours before serving.

Marble Tea Stained Eggs

Ingredients

6 hard boiled eggs (not peeled)
2 black tea bags, unflavored
2 star anise
1 cinnamon stick
1/2 tsp black peppercorns, crushed
1 tbsp dark soy sauce
1 tsp sugar
3-4 cups water (more if needed so eggs are submerged)

Directions

Add all ingredients except eggs to a medium pot. Bring mixture to a boil, then reduce heat, cover, and simmer for 10 minutes.
Remove from heat and allow liquid to cool.
Lightly crack egg shells all over. (This allows tea mixture into the shell.)
Place eggs in cooled spiced tea mixture in pot, or in quart jar, and cover.
Refrigerate for 24 hours before serving.
