Beef Jerky and Spinach Pasta

1 tbsp
1/2 cup hickory smoked beef jerky, julienned
1/4 cup red onion, diced
2 tsp garlic, thinly sliced
1/4 to 1/2 crushed red pepper
2 cups whole wheat spaghetti, cooked
1/2 cup white wine
2 cups fresh baby spinach
2 tbsp parmesan cheese, shredded (optional)
1 tbsp fresh parsley, chopped (optional)


Heat oil in large nonstick skillet over medium heat. Add jerky, onion, garlic, and red pepper. Cook 3 to 5 minutes or until jerky is tender.
Add pasta to skillet. Cook 1 to 2 minutes until heated through.
Add wine. Cook 3 minutes until liquid is almost evaporated. Remove from heat.
Add spinach. toss mixture until spinach is slightly wilted. Garnish with parmesan and parsley, as desired.

Cook’s Tip: You may toss pasta mixture with 1/8 cup julienned sun-dried tomatoes when you add spinach, as desired.

Beef Jerky Granola Bars

16 oz. beef jerky, chopped
4 cups quick oats
1 can (14 oz.) fat-free sweetened condensed milk
1/2 cup slivered almonds
1/2 cup dried cranberries
1/2 cup shelled sunflower seeds
1/2 cup dark chocolate chips
1/3 cup honey


Preheat oven to 350°F. Coat 9×13-inch baking pan with cooking spray.
Combine all ingredients in large bowl. Mix thouroughly.
Pat into prepared baking pan. Bake for 30 minutes.
Refrigerate until cooled. Slice into bars. Store bars covered in refrigerator.

Cook’s Tip: In place of almonds, cranberries, sunflower seeds and chocolate chips, you may substitute any of the following making sure the total amount is 2 cups: peanuts, cashews, walnuts, pistachios, pecans, pretzels, dried cherries, raisins, coconut flakes, pepitas, white chocolate chips, etc..

Peanut Butter Chocolate-Hazelnut and Chocolate Chip Beef Jerky Cookies

3/4 cup butter, softened (1-1/2 sticks)
1/2 cup sugar
1/2 cup brown sugar
1/2 cup creamy peanut butter
1/2 cup chocolate-hazelnut spread
1 egg
1 tbsp vanilla extract
1-1/2 cups all purpose flour
1 tsp baking soda
1/4 tsp kosher salt
2/3 cup beef jerky, finely chopped
1/4 cup bittersweet chocolate chips


Preheat oven to 350°F.
Combine butter, sugars, peanut butter, and chocolate-hazelnut spread into large bowl. Using a stand mixer or by hand, mix until fluffy. Add egg and vanilla. Mix until fully incorporated.
Combine flour, baking soda, and salt in medium bowl. Whisk together.
Add flour mixture to butter mixture. Mix until incorporated, do not over-mix.
Add jerky and chocolate chips.
Divide dough into 24 equal balls. Place on 2 ungreased shallow-rimmed baking sheets.
Bake 13 to 15 minutes or until tops are evenly cracked. Cool 10 minutes before serving.

Beef Jerky Trail Mix

1 cup beef jerky, chopped
1/2 cup whole almonds
1/4 cup dried cranberries
1/4 cup sunflower seeds


Mix all ingredients in a bowl. Store in airtight container in the refrigerator.

Cook’s Tip: You may substitute any nut for almonds, any dried fruit for cranberries and any seed for sunflower seeds.
