Veggie Loaded Grilled Cheese
Makes 4 servings
Getting started Equipment you will need: cutting board, chef knife, medium skillet
4 oz. sharp cheddar cheese
1 cup zucchini
1/2 cup carrot
1/4 cup red onion
1 Tbsp. jalapeño pepper, (optional)
1/4 cup salsa
8 slices 100% whole wheat bread
2 Tbsp. olive oil
1. Shred cheese into small bowl. Finely chop zucchini, carrot, red onion and jalapeno and mix with cheese.
2. Add salsa to mix.
3. Heat 1 Tbsp. oil in skillet over medium heat. Assemble 2 sandwiches and grill evenly on each side until done.
4. Repeat step 3 for remaining two sandwiches.
Suggested Side Items: fresh fruit
Tips: You can also use a Panini press or even an indoor electric grill to make these sandwiches. Change up the cheese, vegetables and salsa to put your own creative spin on this sandwich. Shopping list: 1 medium zucchini 2 medium carrots 1 jalapeno pepper (optional) 1 medium red onion
