Makes 6 servings

16 oz. spinach leaves, chopped

7 large eggs
2 Tbsp. milk
1/3 cup grated Parmesan cheese
Salt and freshly ground pepper to taste
1 Tbsp. olive oil
1 medium red onion, finely chopped
1 large clove garlic, minced
3 oz. goat cheese

Preheat oven to 400° degrees. Cook spinach in saucepan with ¼ cup water; cover saucepan until slightly wilted. Drain water and set aside. In mixing bowl, whisk together eggs, milk, and Parmesan cheese. Sprinkle with salt and pepper; set aside. In a large oven-proof skillet, sauté onions in oil over medium heat until translucent. Add garlic; cook 1 more. Add spinach. Spread spinach mixture evenly on bottom of skillet. Pour egg mixture over spinach. Use a spatula to lift spinach mixture along sides of pan to let egg mixture flow underneath. Sprinkle with goat cheese. When the mixture is about half set, put skillet in oven. Bake 13-15 min., until puffy and golden. Remove from oven and let cool for several minutes. Use oven mitt to handle hot skillet, even after cooling several minutes.
