Roasted Salmon with Rosemary and Ginger
Makes 4 servings
Equipment you will need: Baking sheet, small mixing bowl
Preheat oven to 425°
Do right away when you get home: action step 1
2 tsp. canola oil
2 tsp. finely grated ginger
2 tsp. finely chopped fresh rosemary
2 Tbsp. low-sodium soy sauce
¼ cup + 2 Tbsp. orange juice
4 (4 oz.) salmon fillets, skin removed
1 tsp. canola oil
1. Combine ginger, canola oil, soy sauce, orange juice, and rosemary in small mixing bowl. Set aside.
2. Spray baking sheet. Place salmon in the middle of the sheet and drizzle with oil. Bake at 425 for 12-15 minutes, flipping halfway through. Salmon is cooked when it begins to flake in the center.
3. Once salmon is done cooking, drizzle ginger mixture over the top and serve immediately.

Tips: Use a rimmed baking sheet to contain juices from salmon. Try fresh orange juice by squeezing 1-2 medium oranges. For added orange flavor, consider topping salmon with orange zest. Shopping list: 1 lb. fresh salmon Orange juice (or 1-2 fresh oranges) Ginger Fresh rosemary
