Roast Beef and Bleu Cheese Wraps
Makes 3 servings
Equipment you will need: cutting board, chef knife
Do right away when you get home: Place leftover pumpkin soup in saucepan and heat over medium-high.
3 (8”) whole wheat tortillas
3 Tbsp. low-fat mayonnaise
1. Spread 1 Tbsp. of mayo on each tortilla, leaving a 1 inch edge all the way around.
½ lb. thinly sliced deli roast beef
1/3 cup bleu cheese
3 large lettuce leaves
2. Evenly divide roast beef between each of the 3 tortillas, placing it toward one end. Sprinkle with Bleu cheese, top with lettuce leaf
½ large red pepper
¼ small red onion
3. Thinly slice red pepper and onion. Place a few slices of each on top of the lettuce.
4. Wrap and roll. Serve with heated soup.
