Roasted Vegetable Hero Sandwiches
Makes 4 sandwiches

4 plum tomatoes
4 Portobello mushrooms
1 yellow bell pepper
2 red onions
2 Tbsp. fresh basil leaves
1 garlic clove
1/4 cup olive oil
1/2 tsp. salt
1. Cut tomatoes into quarters. Cut mushrooms and pepper into 1/2-inch slices. Slice onions. Chop basil and garlic.
2. Combine tomatoes, mushrooms, bell pepper and onions in a bowl and toss with oil, salt and pepper. Spread mixture onto baking sheet lined with foil and roast for about 25 minutes, stirring every 5 minutes. Remove from oven. Toss with garlic and basil and set aside. 4 whole wheat sandwich rolls 8 thin slices provolone or mozzarella cheese 3. Cut rolls in half. Arrange warm vegetables on bread and top with 2 slices of cheese. Let stand for 5 minutes until cheese softens.
Suggested Side Items: fresh fruit and milk
Tips: Add pesto, hummus or sauce of your choice for additional flavor. The vegetables can also be roasted on a charcoal or gas grill. Wrap the contents in a foil pouch or place in a vegetable basket and grill over medium-high heat.
