Gorgonzola Stuffed Bell Peppers

Uncooked brown rice

4 red bell peppers

1 clove garlic

1 ½ cups fresh spinach

½ cup cherry tomatoes

½ cup Gorgonzola cheese


1. Cook rice according to package directions, enough for 4 servings.
2. Meanwhile, prepare peppers. Cut tops off bell peppers and carefully remove seeds. Arrange peppers on a microwave-safe plate and microwave for 2-3 minutes just until tender.

3. Mince garlic and chop cherry tomatoes. In saucepan, over low heat, combine garlic and spinach. When spinach begins to wilt, stir in rice and gorgonzola cheese. Fill bell peppers with stuffing.
4. Arrange stuffed peppers on baking sheet and cook in oven for 5-10 minutes until hot and cheese is beginning to brown.
