Crunchy Cottage Pitas

Serves 4

½ cup diced yellow bell pepper
½ cup shredded carrots
½ cup chopped tomatoes*
3 Tbsp. fresh lemon juice
3 Tbsp. chopped green onion
3 Tbsp. chopped fresh basil
salt and pepper, to taste**
1 cup large-curd cottage cheese
4 lg. whole wheat pita halves

In a bowl, combine the first 7 ingredients well. Gently fold in cottage cheese; divide mixture evenly between pita halves. Serve immediately.

*remove seeds and juice from tomato by cutting in half and gently squeezing prior to chopping
