Corn Salad

Purchase:
Canned corn
Plum tomatoes
Green onions
Red bell pepper
 
Check pantry for:
Light mayonnaise
Salt
Ground black pepper

Suggested side items:
Cottage cheese with peach and blueberries

 

Serves 6 (about 1 cup each)

3 (11 oz) cans corn, drained
3 plum tomatoes, seeded and chopped
½ cup thinly sliced green onions
½ cup chopped red bell pepper
½ cup light mayonnaise
½ tsp. salt
? tsp. ground black pepper 

In a large bowl, combine all ingredients. Cover and refrigerate 1 hour.

Per serving: 240 calories, 8 g fat, 5 g protein, 37 g carbohydrate, 3 g  fiber, 810 mg sodium
