Makes 18 biscuits
Getting started Equipment you will need: medium bowl, fork, non-stick baking sheet, rolling pin, 2-inch biscuit cutter or glass, large nonstick baking sheet Preheat oven to 450? Do right away when you get home: Action steps 1 & 2
3 cups all-purpose baking mix, such as Bisquick
1/2 tsp. ground cinnamon
1 (15 oz.) can yams
3/4 cup skim milk
1. Combine ingredients in a medium bowl.
2. Drain and mash yams with a fork. Add ingredients to bowl. Stir until well mixed.
3. Roll the dough out on a floured surface to a ¾- to 1-inch thickness. Cut with a 2-inch biscuit cutter or a glass. Place on baking sheet.
4. Bake for 10 to 12 minutes or until golden brown.
Suggested Side Items: Maple Walnut Salmon (November 3rd recipe), milk, and side salad
