Whipped Sweet Potatoes
Makes 6 servings
Getting started Equipment you will need: large pot, sharp knife, vegetable peeler, electric mixer Do right away when you get home: action step 1
6 sweet potatoes
½ cup 1% milk
½ cup real maple syrup
¼ cup butter
Salt* and pepper to taste
1. Bring a large pot of water to boil. Peel and cube sweet potatoes. Add to water and cook until tender, about 20 minutes.
2. Using an electric mixer on low, whip potatoes slowly adding milk, ¼ cup at a time. Use more or less to achieve desired texture. Add butter and syrup. Season to taste. Blend until smooth. Serve hot.

Tips: This recipe can easily be doubled to serve more people or halved to serve less. Maple syrup can be eliminated and replaced with 1-2 minced cloves of garlic for a more savory side dish. Shopping list: 6 medium sweet potatoes Real maple syrup
