Warm Mushroom Salad
Makes 4 servings
Getting started Equipment you will need: medium skillet, cutting board/knife, spatula, large serving bowl, salad tongs Do right away when you get home: Action step 1
Tbsp. olive oil
1 1/2 cups fresh mushrooms
1 clove garlic, optional
2 1/2 tbsp. olive oil
2 1/2 tbsp. balsamic vinegar
Pinch of salt and pepper
1. Slice mushrooms. Finely chop garlic. Heat oil in skillet over medium heat. Add mushrooms. Cook, stirring occasionally, until mushrooms are soft and juices are mostly absorbed.
2. Stir in ingredients until evenly blended. Remove mixture from heat and set aside to cool slightly. 1 (10 ounce) package baby greens mix
3. Place greens into a serving bowl and pour warm mushroom mixture over them. Toss to blend; serve immediately.

Tips: Serving ideas: Season with cilantro or other mixed herbs. Top with crushed walnuts, pecans, or almonds.
