Tomato Basil Chicken Skillet
Makes 4 (2-cup) servings

1 lb. skinless chicken tenderloins
1/8 tsp. salt
1/8 tsp. black pepper
1 (15 oz) can no-salt-added diced tomatoes
1/4 cup fresh basil
1 (9 to 10 oz) package prewashed spinach
2 Tbsp. finely shredded Parmesan cheese
1. Coat large skillet with spray. Cook chicken on medium high heat for 5 minutes or until done, stirring often. Sprinkle with salt and pepper.
2. Drain tomatoes. Chop basil. Add to hot chicken mixture. Continue cooking until heated through. Remove from heat. 3. Add spinach to skillet. Toss with a spatula until spinach is wilted. Sprinkle with cheese; serve.
