Pumpkin Pancakes

Ingredients
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
2 Tbsp. brown sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. ground nutmeg
2 cups fat-free milk
1/2 up canned pumpkin
1 egg, lightly beaten
2 Tbsp. canola oil
Action:
1. Preheat skillet or griddle. Combine ingredients in a large bowl. Set aside
2. Combine ingredients in a small bowl. Stir in dry ingredients from step 1 until just moistened. Mixture will be lumpy. 3. Pour ΒΌ cup batter per pancake onto a hot griddle coated with cooking spray; flip when bubbles form on top. Cook until other side is golden brown.
Suggested Side Items: Fresh fruit bowl and glass of milk
Tips: Try topping pancakes with baked apple slices and cinnamon. If batter is too thick, add milk 1 Tbsp. at a time until batter reaches desired consistency. Shopping list: 15 oz. can of canned pumpkin
