Quick Pumpkin Apple Oatmeal
Makes 4 servings
Getting started Equipment you will need: medium saucepan, small bowl, spoon (2), bowls (4) Do right away: Action step 1
1 1/3 cups water
2/3 cup apple juice or apple cider
1/2 cup canned pumpkin
1/3 cup chopped dried apples
1 1/4 cups quick-cooking oats
1 Tbsp. packed brown sugar
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 cup nonfat vanilla yogurt
Ground cinnamon, optional
1. Combine ingredients in saucepan. Bring to boiling.
2. Combine ingredients in bowl. Stir into boiling water mixture (step 1). Cook for 1 minute, stirring occasionally.
3. Pour oatmeal into 4 bowls. Top each with 2 tablespoons of yogurt. Garnish with additional cinnamon, if desired.
Suggested Side Items: scrambled eggs and glass of milk
Tips: Make a large batch of oatmeal on the weekend to last all week! Prepare as directed through step 2; refrigerate. Warm individual servings in the microwave for 45 seconds to 1 minute. Add yogurt as indicated in step 3.
