Sesame Ginger Glazed Asparagus
Makes 4 servings
Getting started Equipment you will need: large pot, steamer insert (optional), microwave safe mixing dish, medium non-stick skillet Do right away when you get home:
1 Tbsp. sesame seeds
1 lb. Asparagus
1 Tbsp. lower-sodium soy sauce
1 tsp. honey
1 tsp. lemon juice
½ tsp. ginger powder
½ tsp. fresh garlic
1. Heat skillet on medium heat and toast sesame seeds until golden. Remove from heat and set aside. (see tips)
2. Cut bottoms of asparagus, about 1 inch from the end. Steam in large pot until tender, approx. 5 minutes. (see tips)
3. Mince garlic and mix in microwave safe dish with soy sauce, honey, lemon juice, and ginger. Stir until mixed. Heat mixture in microwave for about 1 minute, or until thickened.
4. Lay asparagus on serving dish, drizzle with sauce and sprinkle toasted sesame seeds over the top.
Suggested Side Items: stir fry or grilled meat
Tips: Sesame seeds toast very quickly due to their size. Keep a close eye on them so as to not burn them. If you don’t have a steamer, you can boil the asparagus for 2 to 3 minutes, until tender.
