Chicken Waldorf Salad

Ingredients
1/3 cup low-fat mayonnaise
1/3 cup nonfat plain yogurt
2 tsp. lemon juice
1/4 tsp. salt
1 medium red apple
1 cup green or red grapes
1 cup celery
1/4 cup walnuts
3 cups cooked skinless chicken breast
1/4 cup walnuts
1. Whisk ingredients in a large bowl.
2. Dice apple, chop grapes in half, slice celery, and chop walnuts and chicken. Add ingredients to bowl. Stir to coat well.
3. Chop walnuts. Sprinkle on salad and serve.
Suggested Side Items: whole grain roll and mixed greens
Tips: You may toast the walnuts, if desired. To toast nuts, cook in a small, dry skillet over medium-low heat. Stir constantly, until fragrant and lightly browned, about 2 to 4 minutes.
