4 skinless salmon fillets (about 1 ¼ lbs.)
1/2 tsp. low-sodium lemon pepper seasoning
1 tsp. fresh basil
1 tsp. fresh parsley
1/4 tsp. lemon peel
2 Tbsp. softened butter
1. Thaw salmon, if frozen. Rinse fillets under cold water. Pat dry with paper towels. Sprinkle with seasoning.
2. Grease broiler pan with spray. Place salmon on pan. Broil for 5 minutes. Turn fillets over and broil for another 3 to 7 minutes or until salmon flakes easily when tested with a fork.
3. Meanwhile, snip basil and parsley and finely shred lemon peel. Combine ingredients in a small bowl. Spoon 1 teaspoon of mixture onto cooked fillets.
Suggested Side Items: orzo pasta and broccoli
Tips: This recipe can also be prepared on the grill: Place fish on a greased rack of an uncovered grill. Grill for 8 to 12 minutes, turning once halfway through grilling, until fish flakes easily when tested with a fork. Halibut or sea bass fillets can be substituted for the salmon.
