Baked Herbed Fish Fillets
Makes 4 servings
Getting started Equipment you will need: 9x13-inch baking dish, fork, small saucepan, spoon, cutting board/knife Preheat oven to 375? Do right away when you get home: Action step 1
4 white fish fillets such as flounder, fluke, or Pollack (1 ¼ lbs.)
Salt, to taste Black pepper, to taste
1/2 Tbsp. unsalted butter
3 Tbsp. unsalted butter
1 clove garlic
2 Tbsp. lemon juice
1 Tbsp. capers
1 Tbsp. fresh tarragon
1. Coat baking dish with spray. Arrange fish in dish, sprinkle with salt and pepper, and dot with butter. Bake for 10 minutes or until fish becomes opaque and flakes with a fork.
2. While fish is baking, melt butter in saucepan over medium heat. Mince garlic and add to pan. Cook, stirring, for about 1 minute. Stir in lemon juice. Drain and rinse capers and chop tarragon; add to pan. Drizzle sauce over fish and serve.
Suggested Side Items: Brown Rice Pilaf with Snap Peas and red grapes
Tips: Salted butter can be used in this recipe. Simply omit the salt in step 1. Shopping list: 4 white fish fillets of your choice (about 1 ¼ lbs.) Capers Fresh tarragon
