A hospital in our area is taking the idea of locally grown food to a new level.
Mayo Clinic Health System in La Crosse changed out the perennials that are normally planted on the second floor and at the front door of the hospital for vegetables.
Employees spent some of their Tuesday planting tomatoes, green beans, lettuce, peppers and other edible plants at the La Crosse facility.
The goal is to produce some nutritious foods for the hospital, and to encourage people to take up gardening.
"Rather than filling up your yard space with just regular plants and shrubs and flowers, incorporate some things that also produce nutritious foods. So if you're going to put a bush in, consider a blueberry bush. It's gorgeous and it's great tasting too," said registered dietician Kathy Oslund.
The La Crosse Public Library's Seed Library donated some tomato seeds for the project.
The vegetables will be incorporated into some recipes that will be made in the hospital's cafeteria this summer.
