A late start to the season has maple syrup farmers hoping for the best. The season is kicking off about to 2 weeks later than expected.
Typically, trees are tapped by the first week in March.
Maple trees need a cycle of freezing and thawing to produce the sap needed to make syrup.
Because of the unpredictable weather we've been experiencing, the window for syrup production is small. "In the time it takes to travel to the tanks, accumulate, and us pump it up, the sap can start going bad. Bacteria builds up when it gets in the 50's, 60's and 70's," said maple syrup producer Eric Meyer.
He says he taps about 1,500 trees each season.
