Fruit & Pecan Granola Bars
Makes 16 bars

1 egg

1 egg white

1 cup brown sugar

1 Tbsp. canola oil

1 tsp. ground cinnamon

1/4 tsp. salt

1 tsp. vanilla extract

2/3 cup dried cranberries or golden raisins
1/4 cup pecans
1 1/2 cups rolled oats
1 Tbsp. flour
Cooking spray
1/4 cup pecans
1 1/2 cups rolled oats
1 Tbsp. flour
Cooking spray


1. Whisk ingredients in a large bowl.
2. Chop cranberries or raisins and pecans. Stir ingredients into bowl. Line pan with foil and coat with spray. Spread mixture into pan.

3. Bake for 30 to 35 minutes until golden brown. Cool; cut bars with a lightly oiled knife to prevent sticking.

Tips: Substitute almonds, walnuts, or peanuts for pecans to create a different flavor. Dates, dried apricots, or dried blueberries can be used in place of dried cranberries or raisins. Shopping list: Dried cranberries or golden raisins Pecans Rolled oats
